Stuffed Deviled Eggs

While deviled eggs are a classic, I've taken a different approach by stuffing them with egg salad instead. I came up with this twist because not everyone is a fan of the traditional yellow filling. With this bite, you get all the deliciousness of egg salad enclosed within a neatly halved hard-boiled egg. It offers a more elegant and tidy way to serve this delightful dish at parties, eliminating the need for a big bowl of egg salad that guests have to scoop onto their plates. 

Serving: 6 people
Time: 15 minutes

Ingredients: 

  • 12 eggs, hard boiled (6 for the salad & 6 cut in half for the 
  • 1.5 teaspoons [Not So] SIMPLE SPICE
  • 1 tablespoon dill relish
  • 1 tablespoon sweet relish
  • 2 tablespoon yellow mustard
  • 1/2 cup mayo
  • Optional garnish, dill or chives

Directions:

  1.  In a medium bowl, shred 6 of the hard boiled eggs with a large cheese grader. .
  2. Add all other ingredients and stir to combine.
  3. Cut the other 6 eggs in half, discard the yolk and place each half on a plate or egg tray.
  4. Fill each egg half with the shredded egg salad. Garnish with dill or chives.
