Shepherd's Pie Baked Potatoes

This recipe is super special to me as it was my first recipe and reel that gained viral popularity on social media, so I couldn't resist sharing it with all of you. What I appreciate about this dish is that each person gets their own individual potato, making it more visually appealing than the typical pan of shepherd's pie. You can easily make substitutions by using turkey, chicken, or omitting the meat altogether to create a vegetarian version. Just like some of my other recipes, it doesn't necessarily require additional sides, but if you'd like to include one, a garden salad is a great choice to add some extra greens to the meal.

Serving size: 4-6 people
Time: 1 hour and 30 minutes

Ingredients for potatoes:

  • 3 large baking potatoes
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • salt and pepper to taste
  • ½ teaspoon garlic powder

Ingredients for the Shepherds pie:

  • 2 tablespoons butter
  • 2 carrots, diced
  • ½ cup onion, diced
  • 2 teaspoon garlic, minced
  • 1 pound ground Turkey, Chicken or Beef
  • 2 tablespoons Worcestershire sauce
  • 1.5 teaspoons [Not So] SIMPLE SPICE
  • ¼ teaspoon onion powder
  • ½ teaspoon oregano
  • 2 teaspoon dried thyme
  • 3 tablespoon tomato paste
  • ½ cup frozen peas
  • garnish: chopped fresh chives

  1. Preheat the oven to 350 degrees.
  2. Prick the potatoes all over with a fork and place them directly in the oven for 45 minutes to 1 hour.
  3. Cut a 1/4-inch-thick slice off the top of each potato.
  4. Scoop out the potatoes into a bowl and mash with the cream, butter, salt, pepper, & garlic powder. (be careful to not break the potato skin since you will put everything back in)
  5. Heat oil in a skillet and sauté the carrots and onion until softened then add the garlic and sauté for another 2 minutes.
  6. Add the ground meat & spices.  Cook for about 6 minutes.
  7. Add the rest of the ingredients and cook for another 4 minutes.
  8. Spoon the mixture into the potatoes and top with mashed potatoes.
  9. Place back into the oven for 10 minutes then broil for 2 minutes to brown the top. Garnish with fresh chives and enjoy!
