This is a straightforward, low-carb weeknight meal that can be prepared in advance and baked when you're ready. What I appreciate most about this dish is its versatility—you can make it for a single person or easily scale it up for a larger group by preparing one chicken breast per guest. It's also excellent for leftovers, as it remains delicious even when served cold, much like pizza. For a complete meal, consider serving it with a Caesar salad and your choice of bread or pasta.

Ingredients:
- 2 chicken breast; about 1 pound
- 1.5 cups pasta or pizza sauce
- 1/2 cup diced fresh tomatoes
- 1 teaspoons [Not So] SIMPLE SPICE
Optional stuffing:
- 1/2 cup pepperoni
- 1/4 cup black olives
- 1/4 cup mushrooms
- 1/2 cup mozzarella cheese
- salt, pepper & Italian seasoning, to taste
- Optional garnish: fresh parsley & or Italian herbs
Directions:
- Preheat the oven to 400 degrees.
- In a shallow casserole dish pour 1 cup of pizza sauce into the dish.
- Place chicken breast ( sliced down the middle but don’t cut all the way in half so you can stuff it).
- Add the diced tomatoes around the chicken.
- Add the rest of the sauce between the 2 chicken breast then add the pizza stuffing.
- Close the chicken and sprinkle with salt, pepper & Italian seasoning.
- Bake at 400 for about 35 minutes or until the chicken temp reaches at least 165 degrees.
*Optional: Add mozzarella cheese to the top of each chicken breast for an extra 5 minutes on broil until the cheese is bubbling
