Pancake Tacos

One morning, craving a twist on the traditional pancake, I ventured to shape it into a taco. The result? An instant success. With their delightful combination of fluffy pancakes, fresh fruits, and whipped cream, these tacos offer a universally appealing treat that's both fun and sophisticated. Their playful twist appeals to kids and adults alike, making them perfect for all ages. Despite their simple preparation, using convenient pancake mix and straightforward fillings, their vibrant presentation ensures they look elegant on any table. This balance of ease and elegance, coupled with their versatile nature, makes them a standout choice for both casual and special dining occasions. You can also change up your topping to whatever your taste buds desire!  

Ingredients:

  • 2 cups pancake mix (any brand you prefer)
  • Ingredients required for the pancake mix (typically water, milk, or eggs, as directed on the package)
  • 1 cup strawberries, hulled and sliced
  • 2 ripe bananas, peeled and sliced
  • Whipped cream
  • Optional garnish: granola, chia seeds or something crunchy

Directions:

  1. In a mixing bowl, prepare the pancake batter according to the instructions on the package.
  2. Heat a non-stick skillet or griddle over medium heat. Once hot, pour 1/4 cup measures of the batter to create smaller pancakes (these will be your taco shells).
  3. Cook each pancake until bubbles form on the surface, then flip and cook until the other side is golden brown. Once cooked, set aside on a plate and cover with a clean kitchen towel to keep warm.
  4. Take a pancake and gently fold it to resemble a taco shell. 
  5. Generously fill the pancake taco with whipped cream. 
  6. Layer in the sliced strawberries and bananas. 
  7. If desired, give a final sprinkle of granola, chia seeds or something crunchy. Enjoy!
