Buffalo Chicken Biscuits

I'm constantly on the lookout for simple yet imaginative party foods or dishes that can satisfy a crowd, and these buffalo chicken biscuits fit the bill perfectly. With just a few ingredients, they're packed with flavor and are sure to be a hit with people of all ages, whether as a snack or a full meal. They offer the advantage of being less messy compared to traditional wings and provide a quick way to satisfy your hunger. Leftovers also make for convenient on-the-go meals. To complete the experience, I like to serve them with carrot and celery sticks, along with ranch and blue cheese for dipping. 

Serving size: 4-6 people
Time: 25 minutes

Ingredients:

  • 1/2 pound cooked chicken, diced or pulled
  • 1 can Pillsbury biscuits
  • 1/2 cup wing sauce 
  • 1/3 cup blue cheese crumbles
  • optional garnish: green onions
  • Optional drizzle or dip: ranch & or blue cheese

Directions:

  1. Preheat the oven to 375 degrees.
  2. In a medium bowl, mix together the cooked chicken, wing sauce & blue cheese crumbles.
  3. In a muffin pan, place 1 biscuit into each muffin hole & use a small shot glass to press down & make a hole in the biscuit. Repeat until all the biscuits are placed in the pan.
  4. Fill each biscuit with chicken mixture.
  5. Cook the stuffed biscuits at 375 for 15 minutes or until golden brown. Top with green onions & serve with blue cheese & or ranch dip.
