Blue Cheese Olive Chicken

Once you've tried my recipe for blue cheese stuffed olives from the appetizer section, you'll be eager to experiment further! The olives' salty tang coupled with the rich flavor of blue cheese forms an excellent match for chicken. This mixture is also a delightful stuffing for a turkey breast or pork tenderloin. The recipe is straightforward and effortless, yet yields a flavor that seems intricately complex. It requires just a handful of ingredients but promises to tantalize your taste buds. Serve it alongside a fresh spinach salad and some steamed rice for a fabulous weekday dinner, or as a sophisticated offering to wow your guests at your next gathering!

Time: 1 hour

Ingredients:

  • 2 chicken breast; about 1 pound (marinated for about 1 hour in some olive juice)
  • ½ cup green pitted olives, chopped
  • ½ cup crumbled blue cheese
  • 2 teaspoons [Not So] SIMPLE SPICE
  • Optional: extra blue cheese for the top
  • Optional garnish: fresh parsley

Directions:

  1. Preheat the oven to 400 degrees.
  2. Place the chicken breast into a greased dish ( sliced down the middle but don’t cut all the way in half so you can stuff it).
  3. Add ½ of the olives & blue cheese into each chicken breast. Make sure to stuff the cheese in first so it stay inside while baking. Fold over to close the chicken
  4. Sprinkle SIMPLE SPICE evenly to the top of each chicken breast.
  5. Bake at 400 for about 30 minutes or until the chicken temp reaches at least 165 degrees.

*Optional: Add blue cheese cumbles to the top of each chicken breast & place back in the oven on broil for an extra 5 minutes or until the cheese is bubbling
